Easy-to-make Fluffy Pancakes

Ingredients

  •  2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 tablespoons maple syrup
  • 2 cup almond milk (or other non-dairy milk)
  • 3 tablespoons of coconut oil (or extra-virgin olive oil)
  • 1 teaspoon vanilla extract

(Makes 8 pancakes)

Method

  1. Sift flour, baking powder and salt into a medium bowl.
  2. Make a well in the middle, and pour in maple syrup, vanilla, oil and half the almond milk. Whisk together.
  3. Gradually add the rest of the almond milk until thick pouring consistency.
  4. Heat up a lightly-greased griddle or nonstick pan to medium low.
  5. Pour in the pancake batter about 1/4 cup at a time and cook until golden brown on both sides.

Serve with toppings of your choice like maple syrup, fresh fruit or jam!
