Quick-and-easy Breakfast Scramble

 

Hens who are raised to produce eggs are confined in extremely small cages or packed sheds. This overcrowding causes birds to peck at one another. Because of this, farmers ‘debeak’ birds, slicing off more than half of the beak and causing the hens chronic pain. This mutilation is standard practice in the egg industry.

Luckily you can enjoy all the same flavors you love, without the eggs! Try this delicious and cruelty-free breakfast scramble!

Ingredients (Serves 2)

  • 8 ounces extra firm tofu
  • 1 to 2 tablespoons olive oil
  • 1/4 red onion, thinly sliced
  • 1/2 red pepper, thinly sliced
  • 2 cups kale, loosely chopped
  • 1/2 teaspoon each: salt, garlic powder, cumin, chili powder, turmeric
