Spaghetti Bolognese (vegan)

 

If you have a craving for something Italian that is filling, wholesome and full of flavor, then try this delicious Spaghetti Bolognese!

Ingredients (4 servings)

  • 1 large onion, finely diced
  • 2 garlic cloves, minced
  • 1 small zucchini, diced
  • 1 small carrot, diced
  • 1 cup mushrooms, roughly chopped
  • 1 can tomatoes
  • 1 can of lentils (or your favorite plant-based mince)
  • 2 tbsp tomato paste
  • 1 tablespoon dried mixed herbs
  • 2 tbsp soy sauce
  • 1 cup vegetable stock
  • 1 pound vegan pasta

Method

1. Heat a little oil in a large pan and fry onion and garlic until soft.

2. Add zucchini, carrot and mushrooms and cook, stirring, for a further couple of minutes.

3. Add the lentils (or plant-based mince), can of tomatoes, tomato paste, herbs, soy sauce, vegetable stock and stir well. Season to taste with salt and pepper.

4. Simmer gently for approximately 20 minutes, stirring occasionally.

5. Remove from heat, and serve over pasta. Garnish with basil and parsley, if desired.
